Soup weather is here! Although the average temperature in Puerto Rico is 80 °F and stews are eaten year round, those of us in colder climates can appreciate them all the more after a long day of running errands in chilly rain, sleet, or snow.
You’ll notice that some of the recipes below use the word “sopa”, others the word “sancocho”, and still others are called “asopao.” As you may have guessed, “sopa” means soup, but the other two don’t have exact English equivalents. A “sancocho” is a stew which includes meat and root vegetables and “asopao” is kind of like gumbo, but no matter what you call it, a hearty bowl of Puerto Rican goodness is sure to hit the spot.
