Our big holiday feast is on Christmas Eve, or Nochebuena. Our family enjoys arroz con gandules (yellow rice with pigeon peas), pernil (roast pork shoulder), pasteles, and coquito (our holiday drink). There’s usually a variety of other side dishes and of course, plenty of leftovers! While we’re more than happy to eat our Christmas Eve leftovers just as they are, sometimes it’s fun to mix things up by creating new dishes from leftovers. Whether it be a pork sandwich with leftover pernil or perhaps a new soup combining leftover pernil with arroz con gandules, trying new recipes with your Nochebuena or Christmas leftovers can be fun. That’s why I’m excited to share this really quick and simple meal I came up with using leftover Puerto Rican pernil that only needs 5 ingredients, all of which you can find at your local Walmart!
Using Holiday Leftovers: Puerto Rican Pernil (Roast Pork) Stir Fry Recipe
Ingredients
- 1 Tbsp olive oil
- 12 oz Marketside Stir fry medley
- salt & pepper, to taste
- Pernil (Puerto Rican style roast pork shoulder), about 2 cups, already cooked
- 3 Tbsp soy sauce
- white or brown rice, already cooked
Directions
- Heat olive oil in large fry pan. Sauté stir fry vegetables over medium-high heat, adding salt and pepper to your liking.
- Cook until vegetables begin to get tender. Lower heat to low-medium.
- Add pernil and soy sauce. Stir until combined.
- Continue cooking until all ingredients are thoroughly heated.
- Serve over rice and enjoy!
This stir fry recipe using leftover Puerto Rican pernil turned out to be delicious! Since pernil is so full of flavor, the leftover roast pork was prime for mixing with vegetables to create the stir fry. It was already delicious as-is, but we went ahead and served it over some white rice to complete the meal.
Taking advantage of holiday leftovers and having the already-cooked pernil really helped cut back on cooking time for this simple meal. Additionally, using the Marketside Stir fry medley ($2.48) found in the Walmart produce section also allowed me to put dinner on the table quickly! So, as you put away those holiday leftovers this week, think about how you could possibly re-purpose them to create simple meals or new recipes to help feed your family easily and quickly!
