With Spring being just around the corner, it’s a great time to start thinking about seasonal spring produce and how we can freshen up our menu. The warmer weather inspires fresh, cooler dishes, with thoughts of outdoor get-togethers and BBQs. Would you agree?
Most likely, the first get-together your family will celebrate this spring season is Easter! I know that many families bring an assortment of dishes together for Easter, so today I want to share a quick and easy recipe you can share with your family this Easter or throughout the spring and summer months! Using fresh spring produce and a new-found dressing flavor, I loved how delicious this pasta salad turned out! Read on for the recipe details and for a giveaway, so you too can make this recipe at home!
This pasta salad recipe is simple to make and uses Naturally Fresh® Ginger dressing as its primary source for flavor. I’m fine with that because Naturally Fresh dressings are free from artificial flavors, colors, and preservatives – that’s why they’re sold in the refrigerated section! They also don’t use artificial thickeners or MSG, so you can feel pretty good in using Naturally Fresh home-style salad dressings in your recipes, salads, and for your family.
Knowing that both mango and avocado are spring seasonal produce and being that I’m a fan of both (individually and as a combo), I decided to try a pasta salad with the two. Adding Naturally Fresh Ginger dressing – made with sweet carrots and spicy ginger – gave this pasta salad a fun blast of flavor, but trust me, it’s in no way spicy!
Not-So-Spicy Ginger Mango & Avocado Pasta Salad Recipe
Ingredients
- Tri-color rotini pasta, 12 oz. package
- 1 mango, cubed
- 1 avocado, cubed
- 1/3 sweet onion (approx.), finely chopped
- 2 Tbsp Naturally Fresh Ginger Dressing
- 1 tsp olive oil + dash for tossing cooked pasta
- salt and pepper, to taste
Directions
- Cook pasta according to package directions. Drain and toss with a dash of olive oil. Set aside.
- In a large bowl, mix remaining ingredients.
- Add about 2/3 of cooked pasta. (You can use more or less depending on how much pasta you’d like in your salad.)
- Serve immediately or refrigerate before serving!
