On my recent trip to Walmart headquarters, we had a fun grilled lunch put together by Grill Grrrl, who also gave us a few grilling tips. One of the tips she gave us that truly stuck with me is that you can think of your grill as an oven, with direct-fire cooking being high heat and off-the-fire areas being low heat. She said with that thinking, you can cook pretty much anything on the grill, even desserts! So, when I got the opportunity from Walmart to create a grilling challenge for myself, I was excited to try my hand at grilling a dessert for the first time. Check out this easy dessert recipe you can make on the grill!
Grilled Poundcake with Mixed Berry Sauce {Recipe}
Ingredients
- Assortment of mixed berries – I picked up strawberries, blueberries, blackberries, and raspberries from Walmart’s fresh produce section.
- 1 cup water
- 1 cup sugar
- 1 Tbsp corn starch
- 1 Tbsp water
- Poundcake, such as the one I found in Walmart’s bakery.
Directions
- Mix berries with 1 cup water and sugar in a skillet and let cook on the low heat side of grill (off direct heat) until boiling.
- In separate bowl, mix corn starch with 1 Tbsp water and add to your berry mixture, continuing to cook and stirring occasionally.
- Cut poundcake into slices thick enough to grill and place on the lower heat area of the grill.
- Grill poundcake just long enough to get good grill marks, otherwise it’ll brown too much.
- Once berry mixture has thickened to your liking, serve either on top of poundcake or on the side.
My girl really enjoyed this grilled poundcake, commenting that the outer layer of crunch from grilling, mixed with the softness of the cake made for a good mix. She even asked that I make this again real soon! I personally loved the sweetness of the berry sauce and how well it complemented the poundcake – plus, it was so easy to make that I think there will be no problem granting my girl’s wish!
