Easter is coming up in just a couple of weeks and I’m sure many of you will be celebrating the special day with a variety of family dishes and fun treats! While you can find a lot of ideas for cute Easter desserts for kids (think Easter bunnies and jelly beans), I wanted to try something a little different with my family. We opted to try baking a new flavor of cupcakes and with the help of Easter baking supplies available at Walmart, gave them a touch of Easter decoration, making them perfect for your family’s Easter get-together! The best thing about these cupcakes is the filling, so let’s find out exactly how we made them, so you and the kids can make some of your own!
Being that I already love the flavors of guava and coconut and the two mix well together, I decided to try baking a guava cupcake with coconut sprinkles. I also figured the pale red of the guava and white of the coconut would work great as a base for Easter colors! When I first made the guava cupcakes, I added blended guava to the cake mix. However, even after adding a significant amount of guava to the mix, the guava flavor wasn’t very strong, so I tried using the guava as a filling instead! That worked out much better and let me tell you, guava-filled cupcakes are delicious! With a bit of cream cheese frosting, a sprinkle of coconut flakes and Easter-colored sprinkles, you and your family will love these Easter Guava Cupcakes!
Guava Cupcakes with Cream Cheese Frosting {Recipe}
Ingredients
- Guava shells, 2 17 oz. cans
- Yellow cake mix + necessary ingredients listed on package
- Coconut flakes
- Easter color sprinkles – You’ll find a large selection of colors and varieties in the seasonal section of your local Walmart!
Ingredients for cream cheese frosting
- 1 1/2 cup cream cheese, softened
- 3 Tbsp butter
- 5 Tbsp splenda
- 2 tsp vanilla
- 3-4 Tbsp milk
Directions
- Drain guava shells, add to blender, and blend until smooth.
- Prepare cake mix according to package directions.
- Add 10 Tbsp of guava to cake mix and mix on low speed until incorporated.
- Fill cupcake liners 1/4 of the way with cake mix. Layer a small teaspoon of guava on top, then another layer of cake mix. (You’ll want the entire mix to be at about the halfway point in the cupcake liner.)
- Bake cupcakes in preheated oven following directions on package – about 20 minutes at 325 °F.
- While cupcakes cool, prepare cream cheese frosting.
- Once cupcakes are completely cool, frost to your liking with cream cheese frosting.
- Sprinkle coconut flakes on top and add Easter sprinkles!
How to make cream cheese frosting
- Mix room temperature cream cheese and butter with electric mixer until creamy.
- Add splenda and vanilla. Mix.
- Add milk as needed until frosting is of spreading consistency.
I loved how great these guava cupcakes turned out! The double guava flavor and gooey guava filling mixed with the cream cheese frosting just made for a wonderful combination. Though guava and coconut may not be traditional Easter flavors, I’m certain your loved ones will love this fun treat when you bring it for your Easter celebration!
