Serving quick and easy meals for my family is my go-to for dinner. With two young kids and a home-based business, it’s easy for my day-to-day schedule to become somewhat hectic. Even so, I try to cook at home as much as I can, which is why I love simple meals that can easily be cooked and on the table within 30-60 minutes. Sometimes we tend to fall into a rut and repeat the same dinner menu items from week to week, so it’s nice when I come across new recipes or new ingredients I can use to create meals for my family. Such was the case when I was recently sent a variety of products available at Walmart stores – I was intrigued by two in particular and decided to try them out for an easy weeknight meal. Asian Style Spicy Orange Chicken Recipe
Ingredients
- 1 1/2 – 2 lbs boneless, skinless chicken breasts, cubed
- 1 Tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cumin
- 1/2 tsp turmeric
- 5 Tbsp Kikkoman Orange Sauce
- 1 Tbsp Nando’s Medium Peri-Peri Sauce
- 1 lb stir fry vegetable mix
Directions
- In large pan bring oil to medium heat.
- Add chicken and season with dry spices.
- Stir to cover completely. Cook chicken until no longer pink.
- Bring heat to low-medium. Add sauces and vegetables.
- Stir to mix and cook until vegetables are tender.
Our Asian-inspired spicy orange chicken turned out great, though I would have liked the color to be more, well, orange! (Ha!) It might be that I needed to use more orange sauce, but I was being mindful of the sodium in the recipe. My family ate it up, though, so I know it tasted just fine! We ate our spicy orange chicken with a side of white rice, but next time I cook this simple meal, I’m going to try to make it into lo mein using linguine noodles.
